Nestled in East Towne Square Mall is Café 1505, a cozy café with a bar, a dine-in area and a bakery with a display case of pastries, sandwiches and salads. “We really strive to be healthy and local,” says Executive Chef Ken Kohls.

The café sources as many local and organic items as it can from companies like Big City Greens, LLC, Barthel Fruit Farm and local farmers markets to provide a fresh and healthy meal, like the combo plate of the parm crusted veggie sandwich and baby spinach salad shown here.

“The parm crusted (sandwich) has been here since day one. It’s a staple,” Kohls says.

The fresh house-baked French bread is crusted with Parmesan cheese, seared on the flat-top grill for an extra crunch and then spread with a Dijon mayo. The bread is topped with organic veggies including sprouts, red onion, tomato and lime-dipped avocado.

This sandwich can be picked up in the deli or out in the dining room, and can be paired with a cup of soup or a salad, like the baby spinach
salad, which is made with fresh organic spinach, chopped apples, house-made spicy pecans, blue cheese and topped with a house-made chutney vinaigrette and a sliced strawberry.

Besides a variety of eye-catching, organic and tasty food offerings, Café 1505 prides itself on its camaraderie and customer service.

“We really strive on customer service and that helps me in thekitchen,” Kohls explains. “Somebody comes in and asks for something (specific), (there’s a) 99 percent chance we’ll be able to do it for you, within reason.”
