Dish of the Month: Maderís Pork Shank


Mader’s, the iconic 117-year-old, German-style restaurant in downtown Milwaukee, boasts a photo wall featuring the many famous faces who have sampled its cuisine, as well as a chair honoring Will Ferrell’s 2011 visit and a table marking John F. Kennedy’s visit. The beautiful, traditional decor and stained glass windows give the impression that you’ve stepped straight into Deutschland, and the variety of authentic staples — schnitzel, a variety of spätzles, sauerbraten and the popular pork shank shown here — will transport your taste buds too.

The delectable skinless shank is slow roasted, dressed with apple demi glaze and served with steamed red potatoes and the diner’s choice of sauerkraut or red cabbage.

Head Chef Lucas Wenthur offers up his own preference. “I like to have the sweet and sour red cabbage with it,” Wenthur explains of the pork shank, which saw a resurgence in popularity after it was featured on Travel Channel’s “Man v. Food.” “It’s got the apples in there, so it goes really well with the pork. But the sauerkraut is the classic way they served it for years and years and years.”

Wenthur also notes that Oktoberfest, his personal favorite beer, pairs well with almost all dishes, but the menu offers the perfect wine or German beer to enhance each specialty.
